Caprese Salad with Balsamic

I know my last blog entry was a recipe, but I just can’t help myself. I’m not sure what it is about this time of year, but I always seem to like spending more time in the kitchen baking and coming up with new recipes. It must be the cooler weather and my love of sweet treats that makes baking around the holidays that much more fun. This next recipe is actually not a sweet treat, but makes a very festive dish if you plan on attending any holiday parties in the coming months.

I have made this recipe one time before, but rarely do I have fresh basil in my refrigerator. I had made a pasta dish last week that called for fresh basil and so I thought, “what could I make with the leftover basil?” Of course! Caprese salad, one of my favorites. I even had enough basil to also make a vegan olive pesto dish for my husband.

Caprese Salad with Balsamic

1 medium large tomato

¼ cup of fresh basil leaves

4 ounces fresh mozzarella cheese

4 teaspoons balsamic vinegar

1 tablespoon olive oil

salt and pepper to taste

Just layer accordingly, serve and eat. So delish!
