No Bake Energy Bites

No Bake Energy Bites are so delicious and super easy to make. If you are looking for an alternative to processed granola bars and looking for something a little bit more fresh you’ll want to try these out.

The ingredients you will need are :

  • ½ cup Chocolate chips (or carob chips, if you wish to make vegan)
  • 2/3 cup Toasted coconut
  • 1 tsp Vanilla extract
  • 1 cup Old fashioned oats
  • ½ cup Peanut butter
  • 1/3 cup Honey
  • ½ cup Freshly ground flax seed
  • 1 Tbsp Chia seeds (optional)

Mix all the ingredients together and then chill in the refrigerator for a half an hour. Once chilled, then roll into balls. Will make about 20 to 25 balls. Keep them stored in the fridge.  These are so delicious I have to be careful how many I pop into my mouth in one sitting! Enjoy the taste and the extra energy!

    My 15-year old daughter, Josie, (who in the past has not been at all interested in any type of healthy food), now wants the energy breakfast bars everyday! Every other week I make a batch of chocolate, (as your recipe calls for), and a batch of plain pb bars, (for me). Josie says that she feels so good when she eats your energy bars!!! Yesterday she had a big 3-hour Trigonometry test. The night before she said, “Mom, make sure you pack me an energy bar to eat before my test!” 🙂 Thank You!
